Each hand-crafted pizza at Giambotta’s begins with a soft dough proofed for 48 hours, prepped with homemade sauce and topped with market-fresh ingredients. It’s then placed in a cavernous wood-fired oven in full view of diners and exits piping hot, fresh, airy — and ready to share.
Father and son owners Robert and Dario Rovito — Robert also owns Plainfield’s Capri Sogno — have created a cozy space where families and friends can reconnect over simple Italian fare.
Beyond pizzas, the menu features Sunday favorites in the Rovito home, including polpette (fried meatballs), arancini (fried risotto balls with bolognese and pecorino), as well as zucchini and fresh-made salads. Popular for dessert is the nutella cream cannoli.
The wines here are hand picked from vineyards in Italy. All are billed as “natural” — containing no additives and bottled without chemical intervention. Beers imported from Italy, along with some local brews, are another specialty.
