Sustainably sourced and seasonally cooked is the guiding concept at B. Good, slated to open in early January at 2555 W. 75th St. in Naperville (331 213-2705). With 50 Locations across the U.S. —including recent openings at 1721 E. Golf Rd. in Schaumburg (224 353-4080) and in Vernon Hills — this is the first foray into the Midwest for the Boston-based “farm-to-table,” fast-casual chain.
The key is local sourcing — B. Good turns to independent farmers to align its seasonal menu with regional harvests. Chicago-area partners — all of which must pass standards of food production with minimal environmental impact — include Mighty Vine, Gotham Greens, Highland Baking Co. and Bobtail Ice Cream Company. The result? A back-to-basics simplicity, with a menu that includes all-natural, hand-packed and antibiotic-free burgers, salads and kale and grain bowls, including one with eggplant meatballs. A variety of sandwiches and wraps plus sides of crisp veggies and oven-finished fries round out the good-for-you menu, along with a choice of smoothies and milkshakes.
